About Us

Heads, Hearts & Tails is a London based event management and drinks consultancy. Founded in 2012, we have established a vibrant portfolio of international clients that include iconic spirit and lifestyle brands, creative agencies and a diverse group of industry leading bars and restaurants. 

We possess unique personal insight and perspective of the entire hospitality sector, our passion derived from a collective experience of over 60 years spent working in acclaimed bars and restaurants and as large-scale event operators. 

We strive to reflect the world around us in our work, with nature, food and drink, art and design, influencing our creative and practical decisions. We are just as comfortable supporting complex event delivery as we are developing signature cocktail recipes in our test kitchen. From one-day events to festivals, creative conception to execution, HH&T combine inspired drinks, future-proof creative and comprehensive logistical planning, giving peace of mind to know that no detail is ever too small, and nothing is left to chance.

Joe Stokoe
Director & Founder


Joe is an internationally recognised and award winning bartender with over 20 years’ experience. His quest for a tasty drink has taken him to cities the world over, including London, Sydney, Vancouver, and New York City. Joe has devoted his life to the bar industry, with a career seeing him lead service, menu development and operations at Milk & Honey, All Star Lanes, Quo Vadis and Trailer Happiness to name but a few. In 2012, Joe founded Heads, Hearts and Tails to bring his experience, insight and enthusiasm to the cocktail-lovers of London. With the help of his talented team, Joe has led HH&T to become one of the leading drinks consultancies and event specialists in the UK.

Liam Cotter
Senior Account Manager


Liam has charmed guests and over-thought cocktail recipes in some of London’s finer establishments since 2006. Before joining Joe at HH&T in 2014, Liam headed up the bar-team at Hawksmoor Spitalfields for three years, overseeing a period of creative growth that culminated in the bar winning ‘Best International Restaurant Bar’ at Tails of the Cocktail. From curating the cocktail menu at much loved whisky bar All Star Lanes, to his work with Michelin starred chef Michel Roux Jr. at The Pembury, his background in fine art and graphic design has enabled him to approach projects from a unique perspective, with a particular understanding of the creative and the aesthetic. Having focused on large scale event projects and brand activations for many years, Liam now leads on brand advocacy, creative development and client management across the company.

Matthew Robertson
Senior Account Manager


Matt realised bartending was as good a reason as any to avoid having a proper job back 2001, starting out slinging 2-4-1 Mojitos and Woo-Woos in a bar that is now a betting shop in London’s Chinatown. Having spent a career moving between the events world and the emerging London bar scene, Matt’s background in the arts and passion for people and creativity led him home to HH&T in 2016, having over the years set up several premium nightclub bars with Joe, and a three year stint at the multi-award winning Hawksmoor Spitalfields Bar with Liam. He now project manages across HH&T’s entire client base to develop, optimise and execute their creative and operational strategies, managing large-scale brand activations and trade advocacy projects; and as a trainer and spirit educator. He has a seemingly ninja facility for misunderstanding electrical equipment.

Sebastian Davis
Project Manager


Seb’s career in hospitality began in 2011, when he took a part-time job as a bar-back at the world famous Portobello Star. He quickly graduated to full-time bartender under the ‘tutelage’ of Jake F Burger, if tutelage is the correct word. He moved on to El Camion to develop further under the mentorship of the late, great Dick Bradsell. At a young age, Seb has amassed a CV of considerable note, joining HH&T as Head Bartender in 2016, and progressing to Events Manager in 2017. He now heads up our busy event schedule, whilst playing a leading role in brand commissioned drinks development, and drink styling for print and digital media.

Emily Blacklock
Events Manager


Emily graduated from the University of Plymouth with a degree in Events Management, hoping to turn her passion for events into a career. Joining HH&T initially to deliver logistic and administrative support to our Secret Cinema operations, Emily quickly made herself indispensable to all areas of the business and now provides the essential link between the creative, logistic and event departments across the company. When not running the HH&T office, Emily will be found at most of HH&T’s brand activations and private events.
